Zach Lieberman has been in restaurants since he was sixteen years old. He has worked his way up, learning at places like Sycamore and Oleana. Now, at Café Sushi in Cambridge, he has expanded the wine list and has chosen to highlight smaller producers, in addition to some very interesting sake. He’s using his new position to show diners that natural wines can fit into every menu. Because sake and beer are still the most popular choices, he has decided to make the most of his wine list and showcase a completely new menu with wines that people wouldn’t normally think to order. Along with familiar favorites, he has added some unlikely wines in the hope of encouraging his customers to try something new.
At Cafe Sushi, he been satisfying palates by serving the most thirst-quenching wines. White wines with bracing acidity like the Clos des Allees Muscadet, and the freshest reds like Land of Saints' Pinot Noir. And of course, it wouldn’t be summer without a little rosé. Zach has created a wine list perfectly suited for tempura, bento boxes, and of course, sushi. We know you’ll love his picks just as much as we do. Cheers!

T H E  W I N E S 

  • Corbières Gris de Gris Rosé: Medium , classic rosé with notes of delightful orange blossom. With the perfect acidity and a long finish, this is quite the palate igniter! Try this with shrimp shumai or salmon sashimi. 
  • Clos des Allees WhiteA light bodied, satisfying white with notes of fresh pineapple, caramelized banana and ritz cracker. We recommend this yellow tail crudo or scallop temaki. 
  • Land of Saints Pinot Noir Light and lively red with notes of boysenberry, dried rose and graphite. Enjoy this with seared salmon belly or miso tofu. 
  • "Envol" Medium bodied, layered red  blend with notes of dark cherry. This wine continues to evolve with each sip. Pair this pork gyoza or short ribs.
