This wine is youthful, ripe and spicy! A traditional take on Toro this wine is made mostly with Tempranillo (called here Tinto de Toro) and blended with a very small percentage of Garnacha. The Grenache is over 60 years old and the Tinto de Toro is between 25 and 40 years old. Grown at an altitude of around 750 metres on mostly sandy soils, the grapes maintain their acidity and give a great expression of the fruit.
The wine has notes of bold ripe red fruit (black cherry, cassis, cranberry) with a fair amount of salinity and slightly spicy undertones.On the palate dark berry and black cherry notes appear with spice, cola and wiley herbaceousness. Spritzy upon opening but settles medium-bodied and balanced. Alvar de Dios produces his wines with care. His team hand-picks and ferments with native yeasts, in addition to farming organically. The wine is aged in French oak foudres and large barrels for 5 months and then is bottled unfined and unfiltered.
