Pale straw in the glass, its nose is full of stone fruit, green apple, pear, and white flowers. On the palate is a fresh acidity with hints of nectarine and honeycomb. There's also a touch of salinity and a gentle bitterness, classic for the varietal, that only adds to its memorable finish.
It is made from 100% Eva de los Santos. From this, we get a wine that is reminiscent of some Rias Biaxas wines with many of the same stone fruit characteristics. Grown in the southwest region of Extremadura on the Portuguese border nearJuan Sojo and √Ångel Luis Gonz√°lez, the winery takes pride in being the only organic winery in the region. The grapes are harvested manually at night to preserve quality and freshness. It is fermented with wild yeast in stainless steel then bottled unfiltered and unfined.
