This month we’re heading to Cambridge to hear from Stanislaus Hilbert. Stan owns Forage where he showcases the freshest local ingredients that are transformed by head chef and skillet wizard, Eric Cooper. They make the simplest food shine by elevating its natural flavor, not augmenting it to create a new one.

This philosophy extends to the wine list where many bottles come from Stan’s own importing company, Satellites Imports. Together with his brother Thomas, Stan brings in a unique selection of French wine that succeed in capturing the essence of their regions. He highlights producers who don’t believe in manipulation in any form, who know that clean farming means healthy grapes and happy wine. More from Satellites coming soon! T H E   W I N E S 

 

  • Château Barouillet, Bergerac Blanc –  Light and Honeyed. Salty and just a little sweet. There's a reason it's called Bergecrac!  Mussels from Forage or a nice Crab Salad are what you need here. 
  • Θantepntik, Moschofilero Rosé – (pronounced "THON-tip-dik") Flirty and Flowery. Fresh Rose, Tangerine, White Grapefruit. So dry, so delicate. This Moschofilero deserves some lovely shellfish. Pair with Lamb Kofta from Forage or some Roasted Artichokes.
  • Domaine Chateau Grand Pré, Beaujolais Villages – Simply irresistible. Raspberries & Potting Soil (trust us).  Forage Hakurei Turnips or some good old fashioned aged Gouda, that's what you need. 
  • Le Petit DomaineMyrmidon – Wild huckleberries and sautéed mushrooms. The most interesting wine in the world. Blueberry candy and wet earth, yes please! Hanger Steak from Forage or a lovely, traditional Cassoulet would pair perfectly.
